Espresso
- Unlatch the portafilter
- Knock out old grounds
- Wipe the portafilter basket clean and dry
- Turn the grinder on
- Begin dosing. Rotate the portafilter while dosing to distribute the grounds evenly throughout the basket as it fills
- Turn off the grinder when you estimate the proper amount has been ground
- Finish dosing, tap portafilter twice to settle espresso
- Groom the dose
- Be sure the tamper is dry and free of grounds
- Tamp lightly
- Wipe any loose grounds from the rim of the portafilter basket
- Latch on the portafilter and turn the machine on
- Stop the flow based on your desired shot volume or color
- Serve the shot immediately
- If the flow rate was faster or slower than desired, consider whether to adjust the grind
**Brewing times should be around 25 seconds, in a high-quality pump-driven machine. If you get 1.5 ounces of espresso in about 25 seconds, your grind and tamp are about right.
